Quinoa Tabbouleh Salad

Before we started writing our recipes down people would ask us how we made it.  Our response was always the same, "We don't know, we always make it differently." Our Quinoa Tabbouleh is a perfect example. We posted this recipe before under the title of  Tabbouleh Salad. Note some ingredient changes and minor proportion changes but the end result is similar.  This is the fun of cooking. This is the creative part, improvise, adapt, and try new things. 

  • 2 cups fresh Italian parsley. Wash, dry, and finely chop the parsley.
  • 1/3 cup more mint leaves, washed, dry, chopped
  • 1 large red onion, washed, dry, and finely chopped yielding about 2 cups of chopped onion
  • 3 large tomatoes, and 1 cup of cherry tomatoes, finely chopped. In total resulting in 2 cups of chopped tomatoes
  • 1 lemon, using a zester, cut and chop the zest from a lemon before squeezing the juice.  Retain the juice from the lemon.
  • 2 tablespoons of tahini paste mixed with one or four tablespoons of water to make the paste into more of a liquid
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 2 cups of cooked quinoa, which will need 1 1/3 cups of water to a 2/3 of a cup of dry quinoa seed
  1. Prepare the quinoa by adding 1 1/3 cups of boiling water to a 2/3 of a cup of dry quinoa seed in a small pot with a lid. Reduce the element heat to low to simmer the quinoa.  Simmer the quinoa for 15 minutes, where all the water typically absorbed and the seed has opened. Set aside until to allow cooling to room temperature.
  2. Finely chop the parsley, onion, mint and tomatoes and place them in a mixing bowl.
  3. Add the zest and juice of the fresh lemon and mix into the mixing bowl.
  4. Add the tahini and water, black pepper and salt into the mixing bowl.
  5. Lastly, add the cooked quinoa to the mixing bowl and toss your Quinoa Tabbouleh salad until all is well mixed. 
  6. Place the salad in serving in individual serving dishes. Optionally garnish with an additional mint leaves and you are ready to serve.
