Tomato Soup

We use tomatoes in many if not most of our meals. This makes a good tomato sauce and a useful thing to have around the kitchen. It is not surprising that we published our Marinara Extra Sauce as one of the first recipes, but sometimes you just want to eat a whole bowl of it, and our Tomato Soup is our way of doing that.

In really there does have to be much difference between a good Tomato Soup or a good tomato sauce.  The truth is, there is not much difference between our Tomato Soup and our Marinara Extra Sauce. They can be interchangeable. In our case, our Tomato Soup is smoother because all the ingredients are puréed, and we exchanged cauliflower for peppers.  Either as a sauce or a soup, you'll enjoy our Tomato Soup. Buon Appetito!

  • 3 cups (680 ml) strained tomatoes
  • 1 large carrot, washed, peeled, and chopped into large chunks
  • 1 white or yellow onion, skinned and chopped into small pieces
  • 2 cloves of garlic, skinned and finally chopped
  • ¼ head of cauliflower
  • 1 cup of water
  • ½ teaspoon dried basil
  • salt & black pepper to taste
  1. Add to a pot the water, peeled carrot, chopped onion, garlic, and cauliflower. Use your stovetop to cook the ingredients to a boil. Once boiling lower the temperature and put a lid on the top and allow 10 to 15 minutes for the vegetables to soften. 
  2. Remove the pot from the stove and allow the contents to cool.  Once cool, use a blender or food processor to purée the contents.  Add more water as needed.  Alternatively, once the vegetables are cooked and soft, you may mash them in the pot or purée using an inverted blender. 
  3. Add remaining ingredients together in a stovetop pot. Adjust your Tomato Soup for your preference to salt and pepper. Bring the soup to a boil then lower to a simmer.  Allow your Tomato Soup to simmer for at least 5 minutes before serving.  

Once completed, your Tomato Soup is ready to eat on its own or with some crusty fresh bread, or use it as a sauce for your favourite pasta noodles. We eat the soup for dinner and used our leftover Tomato Soup as a sauce over farfaalle rigate pasta the next day for lunch. Apart from the obvious usage as a soup pasta, or a  sauce, it stores well and can be used as a component of another meal.   Your Tomato Soup used as a sauce can be used as a condiment on its own as a dipping sauce or added to flavour soups, stir-fries, or as a component to pizza, casserole, lasagna, or other baked pasta dishes.
