Risotto Parfait

Our Risotto Parfait looks a lot better than it looks. Really! We created a massive dish of Risotto Parfait for a party. It was served and at the end of the night the remainder was transferred to a smaller container to be refrigeration. It was not until the next day did we realize that we forgot to photograph it for the recipe post. Voilà, the photograph you see are the leftovers, which didn't last long because it was delicious.

Our Risotto Parfait was one of the party favourites, and we didn't have to resort to a chemistry lab to create a ground meat substitute. We replaced animal meat with plant-based "nut" meat and mushrooms. It is worth learning to make because you can use this protein substitute in other recipes where ground beef, pork, chicken, or what-ever creature of choice is ground.

Base Ingredients

  • 6 cups whole grain cooked rice
  • 1 cup whole food pesto
  • 6 cloves minced garlic
  • 1 large red pepper, diced
  • 2 onions, chopped finely
  • 1 cup nutritional yeast
  • 4 large celery ribs, wash and chop finely
  • One medium-sized tomato sliced thinly to be used as a garnish on the casserole.

Nut Meat Ingredients

  • 1 tbsp fennel seeds, soaked in hot water to soften
  • 2 cups crushed walnuts, soaked in water for 2 hours to soften
  • 15 large mushrooms sliced
  • 2 fluid ounces (56.83 millilitres) of Marsala
  • 2 tablespoons soy sauce or tamari sauce.
  • Salt and ground black pepper added to taste
  1. Precook the rice according to your rice supplier's instructions or follow our instructions for Multigrain Rice.
  2. Use the ingredients of the Nut Meat. Drain excess water from the soaking seeds and nuts combine the seeds with mushrooms and other the ingredients into a pan with a little of water and cook until the mushrooms are tender. Do not like the ingredients dry out while cooking add more water if you believe it is needed. 
  3. Excluding the tomatoes, mix all the cooked ingredients in a large bowl with all the other base ingredients. Mix thoroughly, pour into a baking casserole.
  4. Add the thinly sliced tomatoes on the top, and sprinkle with a little extra nutritional yeast and salt.
  5. Warm the oven to 375 degrees, and cook the casserole for 30 minutes before serving.

Not all Marsala products are created a like. If the bottle label has "Cremovo" written above, below or beside the word Marsala this is not a brand name. It means containing egg yolk. If you can find an ingredients section written in English it will clearly state that eggs are present.
