Nonna Lucia's Amaretto Cookies - Enjoy with your espresso

Peanut Butter Cookies

What’s better than freshly made espresso coffee?  The same coffee with a homemade Amaretto Cookie just like the ones your Nonna would have made but without eggs. This traditional recipe is modified to replace the eggs with a plant-based alternative. The result is outstanding. Nonna is proud.

  • 4 tablespoons of ground flax seeds
  • 12 tablespoons of water
  • 2 lbs or 907 grams of ground almonds
  • 1 lb or 453 grams of sugar
  • 2 tablespoons cocoa powder
  • 4 teaspoons or 20 ml almond extract
  • Coffee beans or whole almonds to decorate
  • Extra sugar for rolling
  1. Mix the ground flax seeds with tablespoons of water. Stir well, and place in the fridge to set for 15 minutes. After 15 minutes, the result should be a sticky egg-like substitute.
  2. Preheat your oven to 300 F degrees
  3. Line a baking sheet with parchment paper.
  4. Mix together the flax mixture with the ground almonds, sugar, cocoa, and almond extract to make a dough.
  5. Form small balls from the dough. We recommend you use a spoon or some other container to scoop out the balls to ensure they are made the same size.
  6. Roll the balls in sugar and top each cookie by pressing a coffee bean or whole almond in the centre of the ball.
  7. Bake the cookies in the middle or top rack for 15 minutes.

To substitute one egg in baked goods, combine one tablespoon of ground flax seeds with three tablespoons of water. Mix and let stand for 15 minutes.
