Pita Pizza Pie

Sometimes quick and easy is what you're looking for, and for us it's a Pita Pizza. You can buy ready-made pizza crusts, even whole wheat crusts, but the ingredient list most often resembles the contents of a chemistry class not a baker's kitchen. Thankfully, we have access to simple middle eastern whole wheat pitas where the ingredient list is short and sounds more natural.  To make things easier,  you buy, not make, a simple tomato sauce to speed things along. 

  • 1 large whole wheat pita 
  • 1 cup (240 ml) sliced or chopped white "button" mushrooms
  • 1 chopped sweet orange or yellow Shepherd pepper or bell pepper
  • ½ cup (120 ml) hummus
  • ½ cup (120 ml) pitted, sliced black olives
  • ½ cup (120 ml) chopped red onion 
  • ½ cup (120 ml) sliced cherry tomatoes
  • a few tablespoons of nutritional yeast to be used as the final topping
  1. Set your oven for 375 degrees Fahrenheit (190.56 °C).
  2. Line a pizza sheet or over pan with chef paper to ensure it does not sick and place your pita in position for the toppings.
  3. With a spoon or brush spread your tomato sauce over the complete surface of your Pita Pizza crust.
  4. With a small spoon sporadically drop small blobs of hummus.
  5. Except for the nutritional yeast, scatter the remaining toppings.
  6. Finish the topping by shrinking on the  nutritional yeast.
  7. Place your Pita Pizza in the over for 25 minutes, remove to cutting broad to cool before slicing and serving.
