Making your own 'from scratch' whole wheat pasta noodles is not difficult.  A basic pasta dough recipe is as simple as flour and water. Mix the two ingredients into a ball of dough that is firm enough to work with and soft enough to be pliable. You need to be able to roll and shape the dough. Reserving a small amount of flour to sprinkle on work surfaces and to dust the rolling pin handles helps reduce the dough stickiness.  As you work with the dough, you will find it helpful to repeatedly  dust surfaces, hands, and the dough itself.  A little salt is often suggested as an ingredient, but you don't need to stop here. In our version of homemade pasta noodles we added basil and ground flax seed. We added some gluten to give the whole wheat dough more structure and ensure the noodles retain their shape while cooking. At other times we use mushroom broth instead of water for added flavour, or we purée some spinach to add colour. 

Once your homemade pasta noodle dough is made, you need to decide what shape your noodles will be.  If you have a pasta making machine you can make varieties like Pappardelle, Bucatini, Fettuccine, Spaghetti, Ravioli sheets or Lasagna sheets.  In our example, we shaped our noodles into Orecchiette, to which Wikipedia defines as "small ears" but to us they seem to be small discs.  The Orecchiette shape can be made without any extra equipment, a simple thumb imprint makes this shape easy enough to be made by small children. A form of entertainment we supply to our grandchild.

  • 2 ½ cups whole wheat flour
  • ¼ cup ground flax seed
  • ½ cup vital wheat gluten
  • Optional, one teaspoon of flaked basil leaves
  • Two or three shakes of a salt 
  • A little extra flour for dusting the dough
  • 2 cups of lukewarm water
  1. Mix all the dry ingredients together and create a small mound of it in a mixing bowl or directly on a clear clean counter or large cutting board.
  2. Create a small depression in the centre of the dry mix and slowly add the water and knead the dough together.
  3. Knead the dough for 10 minutes, at intervals, use a little flour to dust the dough, make the dough into a single ball. Cover with a clean kitchen towel and allow the dough ball to rest for half an hour.
  4. After the dough has rested, cut the dough ball into smaller pieces and roll out to make small long rolls of dough that resemble a rope. 
  5. With a dull knife or spoon or pair of kitchen scissors, cut small pieces from the thin rolls of dough. Each piece is your uncooked pasta noodle. You can flatten each noodle and shape it into something that appeals to you. Use a little more flour to dust the noodles and place them on a tray for later use. Dust with flour freely to make the dough easier to work with.
  6. Make each noodle and store them on a tray lined with parchment paper or wax paper. Do not let the noodles touch, or they may stick together.  Separate layers of noodle with more parchment or wax paper.
  7. Boil a pot of water with a little salt and  place the noodles into the gently boiling water. The noodles float to the surface when ready.  Remove cooked noodles in small batches with a strainer.  It takes a little more time but is easier to identify the cooked noodles.
  8. Strain and serve your pasta with your favourite sauce or soup.

If your child or grandchild have had practice playing with a modelling compound like Play-Doh then they are ready to help you make your own homemade pasta noodles. They may even be over qualified for the job when they deviate from your plan and start making a sculpture with your food. The worst case scenario is you fail to make noodles but end up with dumplings. In our home our grandchild helps us from start to finish.  She mixes the flour ingredients, kneads the dough, rolls out the dough and shapes the noodles.  The only sole parental task is cutting the dough with scissors.  A task she is willing attempt but will have to wait until she at least starts kindergarten.
